These are the times when the harried homemaker can be forgiven for dropping some frozen veggies and a spoonful of salsa into a can of tomato soup.
While the soup is heating, there’s time to whip up a quick batch of Basic Baking Powder Biscuits — all you need to turn a simple soup into a decent supper.
Basic Baking Powder Biscuits
2 cups sifted flour
1 Tbsp baking powder
1/2 tsp salt
1/4 cup shortening
3/4 cup milk
Preheat the oven to 450°F. Combine the dry ingredients, cut in the shortening, and add the milk. (For variation, you can toss in some grated cheese before mixing in the milk, if desired.) Knead gently a few times and pat out about 3/4-inch thick. Cut into 8 or 10 biscuits. Put on an ungreased cookie sheet and bake 8 – 10 minutes, until the tops are just golden-brown.
