Butterscotch Brownies

by Domestik Goddess on November 9, 2005

This recipe is very simple, and one of our family favourites.

Butterscotch Brownies

1/3 cup butter
1 cup brown sugar
1 egg
1 tsp vanilla
1/2 tsp salt
1 cup flour
1 tsp baking powder
1/2 cup nuts or chocolate chips (optional)

Preheat oven to 350°F and grease an 8-inch square pan.

Melt butter. Stir in (do not beat) brown sugar, egg, vanilla, and salt. Sift flour and baking powder, and stir in. Add nuts or chocolate chips, if you’re using them.
Spread in greased pan and bake until lightly browned, approximately 18-20 minutes. Do not overcook, or the squares will not be as moist and chewy. Cool before cutting into squares.

This looks like it would be a good recipe and very easy to use the microwave to melt the butter, then mix everything up in the same pan.
