Frozen Watermelon

My watermelon froze.

I’ll spare you the stressful details, but with one thing and another related to that old refrigerator of mine deciding to die right before a party — and what with having laid in a raft of watermelon for that party — well, in the confusion I ended up with a rock-hard watermelon-shaped chunk of pink ice in a rind.

What to do… oh, what to do?

Well, in the absence of a good recipe for watermelon margaritas — and following the general principles of “lemons from lemonade” — I sliced off the rind and cut the flesh into chunks, fast before it thawed, and tossed it in the blender with a drop of honey and a scoop of vanilla ice cream.

And there is just one word for the slurpy concoction that came out — yummmmmmmy!!! Necessity is, indeed, the mother of some very fine inventions.
