Low-Fat Low-Sugar Cheesecake Recipe

Weight watchers and diabetics need a little cheesecake, too!

The dessert recipes in the fabulous and funny Looney Spoons cookbooks are already incredibly healthy and low-fat… but then we tweaked this this particular recipe just a bit to be even more sugar-reduced, for a dinner party where two-thirds of my guests had special diet requirements. Turned out great, and now it’s semi-regular on our menu!

Low-Fat Low-Sugar Cheesecake Recipe

Crust:

1½ cups crushed low-fat graham wafers
(or equivalent in graham cracker crumbs)
1 egg white

Filling:

1 cup low-fat (1%) cottage cheese
2 cups low-fat sour cream
½ cup Splenda™
2 tablespoons all-purpose flour
1 egg
2 egg whites
2 teaspoons vanilla

Preheat oven to 375°F.

Mix the graham cracker crumbs and egg white for crust, and press into an 8″ pan. Bake for 8 minutes. Then, reduce the oven temperature to 300°F.

Meanwhile, mix up the filling:

• Blend cottage cheese and sour cream.
• Add Splenda™, flour, egg, egg whites and vanilla.

Pour filling into the pie crust.
Bake at 300°F for about 1¼ hours.

Refrigerate for at least 5 hours before cutting the cheesecake for serving.

Top each piece of cheesecake with fresh fruit and/or a fruit coulee, with a decorative drizzle of low-sugar chocolate sauce or chocolate shavings — yumm!
