Sweet-and-Sour Beef Stew

Winter is all about comfort food, but truly, a person can eat only so much “mac-and-cheese,” right?

Here’s an easy recipe for an alternative — I like to double the recipe, freeze the leftovers, and pull it out to reheat on those busy days when I just don’t feel like getting a meal together from scratch.

Sweet-and-Sour Beef Stew

1½ lbs beef stew meat, cut in cubes
2 Tbsp cooking oil

Brown the meat in the oil, using a large saucepan. Add the following:

2 medium carrots, shredded
2 medium onions, cliced
1 8-ounce can tomato sauce
½ cup water
¼ cup brown sugar
¼ cup white vinegar
1 Tbsp Worcestershire sauce
1 tsp salt

Cover and cook over low heat until meat is tender, about 1½ hours. (This would be a good use for that slow cooker!)

Blend 2 tsp cornstarch with 1 Tbsp cold water and add to the stew. Cook and stir until it is thickened to your taste.

Serve over rice or broad egg noodles, with salad or a steamed green vegetable on the side.
