Holidays like Thanksgiving and Christmas make us think fondly of family and friends — but not-so-fondly of all the leftover turkey meals that lie ahead! Over the next few days, I’m going to share some of our favourite family recipes for using up that leftover turkey.
To start with, here’s Aunt Marg’s recipe for a popular turkey casserole, Turkey a la King.
Leftover Turkey a la King
2 cups cooked turkey, cubed
1/4 cup sliced mushrooms
1 Tbsp onions, finely chopped
1/4 cup margarine, melted
1/3 cup flour
1 tsp salt
1 cup chicken or turkey broth
1 cup milk
1/2 cup (or more) frozen peas
1/2 tsp parsley
1/8 tsp pepper
Saute mushrooms and onions in a non-stick pan, then set aside.
In a saucepan, combine margarine, flour, and salt. Cook over medium heat, stirring constantly, and gradually add broth and milk. Cook and stir until the mixture thickens. Add the turkey, mushrooms, onions, parsley and pepper. Heat through and serve over rice or buttered noodles.
We all enjoy seeing this casserole come to the supper table — the only argument is over whether to serve it with rice or with hot buttered noodles; and Cousin Evelyn, who is always a little original, slices open a big biscuit and pours the turkey and a-la-King sauce over top.
