Menu Plan Monday Last week I participated for the first time in Organizing Junkie‘s Menu Plan Monday. Planning a week’s worth of evening meals in advance does take a lot of the last-minute rush and fluster out of getting supper on the table, I found.

So, here’s my next seven-day menu plan.

It starts with leftovers from that big chicken I roasted on Sunday, and — like last week’s plan — features lots of the lovely fresh vegetables that are incredibly tasty (and affordable) around here in September.

Monday:
Leftover Roast Chicken
Potato Wedges
Green Salad, Carrot Sticks

Tuesday:
Greek Vegetable Penne

Wednesday:
Breaded Chicken Cutlets
Hot Potato Salad
Broccoli, Harvard Beets

Thursday:
Homemade Chicken Soup
Tomato-and-Cucumber Sandwiches

Friday:
Chicken-Dijon Pressed Tofu*
  * Dijon mustard and strong chicken broth makes a marinade for the tofu, then I reduce it in the pan as the tofu heats through, to make a sauce for serving. If the chicken broth is a bit wimpy to add enough flavour, or if I need to make a vegetarian version, I use maple syrup and a bit of water instead of the broth.
New Potatoes
Tossed Salad, Carrots

Saturday:
Out to a dinner party — no cooking tonight!

Sunday:
Chicken Curry with Raisins
Baked Rice
Green and Yellow Beans, Pearl Onions

And for the desserts?

Some days are still warm enough that we want to have ice cream or sherbet for dessert, with a bit of honeyed fruit on top. Other days, it feels more like Fall… so I’ll bake a batch of cookies or squares, towards the middle of the week, and a pan of cinnamon buns for the weekend.

    Buffalo is supposed to be really low fat meat a lot better for you then beef, that is what I heard any way. Any one know about this?

    Sounds like a great week!!

    We also bought some buffalo sausage at the farmer’s market, but haven’t tried that yet either. I love bison burgers, so I am hoping for the same results!! Oh….and yesterday while at the farmer’s market, I picked up some buffalo jerky!!

    (and if The Kids show up on the weekend, make it two chickens… ;) )

    Seriously, though, I’ve been trying to follow Canada’s Food Guide a little more rigorously than in the past.

    More of the fruit and vegetables / less of the ‘super-sized’ portions of meat-and-hot-carbs… you know, picking out the vegetable dishes and build the meal from there instead of the other way around…

    Easy enough in the Autumn, when the garden produce is coming in faster than I can cook it up!
