I enjoyed an unusual broccoli salad at a BBQ party last summer and have been looking for the right recipe ever since. Finally, just this morning, I came across something that’s very close to it, in LeAnn R. Ralph’s country recipes collection:
Broccoli Salad Recipe
3 pounds of broccoli (cut into small pieces)
15 strips of bacon (fried and broken into small pieces)
1 cup of walnuts (chopped into small pieces)
Dressing:
1 1/2 cups mayonnaise
3/4 cup of sugar
3 teaspoons vinegar.
Mix up the dressing. Pour over the salad. Let marinate for 3 hours before serving.
LeAnn Ralph says she is inlined to “decrease the sugar a bit and increase the vinegar… to make a salad that’s a little more tart” — and I tend to agree with her.
When I make this the next time, I’ll try using about 1/4 to 1/3 cup of honey instead of all that sugar. That should really complement the bacon flavour without being too sweet — and cut down a bit on the calories count! After all, swimsuit season is coming!
Oh, yeah, there’s no way to pretend that this is a healthy salad! But a little spoonful on the side of a plate of mixed salads, as at a summer potluck, certainly adds to the flavour of the occasion… and I’d happily skip dessert in order to justify a serving of this salad.
omfg how unhealthy!
how many calories are in this!
