We call these “Mum’s Rolled Oatmeal Cookies” because that’s what written in the old homemade cookbook, but this is actually Great-Grandmother’s cookie recipe. It’s a real family favourite, quick and easy to make, too.

Just combine the ingredients in the order given, roll the dough thin, cut it out in 2-inch rounds, and bake the cookies in a hot oven (375 °F is good) for about 7-8 minutes.

2 1/2 cups oatmeal
1 cup brown sugar
2 1/2 cups white flour
1 tsp salt
2 tspe baking powder
1 cup shortening
1/2 cup milk
1 tsp vanilla

An elderly cousin used to make these whenever she came to visit, and for special occasions would sandwich two cookies together with date filling, the same kind that she used when making date squares. Another cousin uses maple flavouring instead of vanilla. Both of these variations are as tasty as the original recipe, which even small children enjoy even though these cookies are not overly sweet and might even be considered vaguely healthy, what with all that the oatmeal in them!

    OAT MEAL COOKIES

    2 CUPS QUICK OATS

    1 CUP BROWN SUGAR

    1/2 CUP WHITE SUGAR

    1 CUP FLOUR (GOLD MEDAL FLOUR)

    1/2 CUP SHORTENING

    1/4 CUP BOILING WATER with baking soda

    1 TSP BAKING SODA

    1/4 TSP SALT
    Keep the oatmeal batter warn until you start baking,( use a towel over the batter).

    MIX OATS, FLOUR, SUGAR AND SALT. STIR IN MELTED SHORTENING AND MIX REAL GOOD ADD SODA TO BOILING WATER AND ADD IMMEDIATELY.

    ROLL VERY THIN ON A FLOURED AREA AND CUT INTO SHAPE. kEEP DOUGH WARM AT ALL TIMES UNTIL YOU PUT IT INTO OVEN.

    BAKE AT 423 DEGREES FOR 5 TO 8 MINUTES OR UNTIL GOLDEN BROWN.

    Yeah, waiting for cookies… that’s always the problem! I think you should have good luck with these cookies — it’s pretty much foolproof because the recipe dates back to when the stove in our kitchen was wood-fired, no fancy thermostat to set the temperature or anything like that. Let me know how they turn out!

    I’m not much of a cook, but I’m going to try to make these cookies. It seems pretty easy. Now I just have to get the patience to wait 7-8 minutes:)
